  • 2 cups raw hulled pumpkin seeds (pepitas)
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon coarse sea salt
  • 1/2 cup freshly grated parmesan cheese
  • 1/4 teaspoon freshly cracked black pepper

Instructions

  1. Preheat oven to 325°F (165°C).
  2. If necessary, rinse seeds and pat them completely dry with a paper towel.
  3. Melt the butter in a small bowl or saucepan.
  4. In a large mixing bowl, whisk together garlic powder, onion powder, smoked paprika, salt, and black pepper.
  5. Pour melted butter over the dry seeds and toss thoroughly to coat every seed evenly.
  6. Spread the coated seeds in a single layer on a rimmed baking sheet.
  7. Roast for 10 minutes until seeds start to look golden.
  8. Remove from oven and sprinkle parmesan cheese evenly over the seeds. Toss gently on the pan to help cheese adhere.
  9. Return to oven and roast for another 5-8 minutes until cheese is bubbly and golden brown.
  10. Remove from oven and let cool completely on the pan for at least 15 minutes until shatteringly crisp.

Notes

Ensure seeds are completely dry before roasting to prevent steaming. Do not stack seeds on the pan; they must be in a single layer for even crisping. Let seeds cool completely before storing to maintain crunchiness. Store in an airtight container at room temperature for up to two weeks.
