  • 2 tablespoons olive oil (for searing)
  • Salt and freshly ground black pepper, to taste
  • 3 tablespoons pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 clove garlic, minced (optional)
  • 2 medium sweet potatoes (about 1 pound / 450 grams), peeled and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh thyme or rosemary sprigs (optional, for garnish)

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC).
  2. Peel and cut sweet potatoes into roughly 1-inch cubes. Toss with 1 tablespoon olive oil, smoked paprika, salt, and pepper until evenly coated. Spread on a baking sheet in a single layer and set aside.
  3. Trim the pork tenderloin by removing any silver skin or excess fat. Pat dry with paper towels.
  4. Season the pork generously with salt and pepper on all sides.
  5. Heat a large heavy-bottomed skillet or cast iron pan over medium-high heat. Add 2 tablespoons olive oil and heat until shimmering but not smoking.
  6. Sear the pork tenderloin in the skillet without moving for 3-4 minutes until a deep golden crust forms. Flip and sear the other side for another 3 minutes.
  7. Place the baking sheet with sweet potatoes into the oven and roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
  8. In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, and minced garlic to make the glaze.
  9. Reduce heat to medium-low and brush the glaze generously over the seared pork tenderloin. Let cook for 1 minute to set the glaze.
  10. Transfer the skillet to the oven (if oven-safe) or move the pork to a baking dish. Roast for 10-15 minutes, or until the internal temperature reaches 145ยฐF (63ยฐC). If not oven-safe, cover and finish cooking on the stove over low heat, turning and glazing every few minutes.
  11. Remove the pork from heat and tent loosely with foil. Let rest for 5-10 minutes to lock in juices.
  12. Slice the pork into medallions and serve alongside the roasted sweet potatoes. Drizzle any pan juices over the top.

Notes

Pat pork dry before searing to get a good crust. Use a meat thermometer to ensure pork reaches 145ยฐF (63ยฐC) for juicy, slightly pink meat. Rest pork for 5-10 minutes before slicing. If glaze thickens too much, add a splash of water or apple cider vinegar to loosen. Watch sweet potatoes closely near the end to avoid burning. Fresh garlic is preferred for glaze but garlic powder can be used.
