Ingredients

Scale
  • 2 cups (about 10 oz or 300g) frozen shredded hash browns, thawed and squeezed dry
  • 1 large egg, beaten (for hash brown buns)
  • 2 tablespoons all-purpose flour (or almond flour for gluten-free)
  • Salt and black pepper, to taste
  • Vegetable oil or butter, for frying
  • 1 pound (450g) ground breakfast sausage
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 large eggs (fried or over-easy)
  • 2 slices sharp cheddar cheese (or pepper jack or Swiss)
  • 2 slices crispy bacon (optional)
  • Leafy lettuce or baby spinach
  • Tomato slices
  • Your favorite breakfast sauce or ketchup

Instructions

  1. Prepare the Hash Brown Buns: In a medium bowl, combine thawed and squeezed dry hash browns with 1 beaten egg, flour, salt, and pepper. Mix gently and form into four equal patties about 1/2 inch thick, pressing firmly.
  2. Cook the Hash Brown Buns: Heat 2 tablespoons vegetable oil or butter in a large skillet over medium heat. Fry hash brown patties 4-5 minutes per side until golden brown and crispy. Remove and drain on paper towels.
  3. Make the Sausage Patties: In a bowl, combine ground sausage with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently and form into four patties slightly larger than hash brown buns.
  4. Cook the Sausage Patties: In the same skillet, reduce heat to medium-low and cook patties 5-6 minutes per side until browned and cooked through (internal temp 160°F). Avoid pressing down.
  5. Fry the Eggs: Heat a small non-stick pan over medium heat with butter or oil. Cook eggs to preferred doneness (over-easy or sunny side up recommended).
  6. Assemble the Burger: On one hash brown bun, layer lettuce or spinach, tomato slice, sausage patty, cheese slice, fried egg, and bacon if using. Top with second hash brown bun and add breakfast sauce or ketchup if desired.
  7. Serve Immediately: Enjoy hot and fresh with extra hash browns or fresh fruit.

Notes

Press hash browns well to remove excess moisture for crispiness. Avoid overmixing sausage to keep patties tender. Cook hash browns on medium heat for golden crust. Keep cooked hash brown buns warm in a low oven while cooking other components. For vegetarian option, substitute sausage with grilled portobello mushroom or plant-based sausage and use vegan cheese and egg substitutes. Reheat hash brown buns in skillet to restore crispiness if made ahead.
