  • 1 cup (125g) all-purpose flour
  • ½ teaspoon salt
  • 4 oz (115g) bittersweet or dark chocolate, melted
  • 1 cup (175g) semi-sweet chocolate chunks or chips
  • Optional: 1 teaspoon espresso powder
  • Optional: ½ cup (60g) chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a microwave-safe bowl, melt 1 cup (225g) unsalted butter and 4 oz (115g) bittersweet chocolate in 20-second bursts, stirring until smooth. Let cool slightly.
  3. In a large bowl, whisk together 1½ cups (300g) granulated sugar, ¼ cup (50g) brown sugar, and 3 large eggs until pale and thick, about 2-3 minutes. Add 2 teaspoons vanilla extract and mix well.
  4. Slowly pour the melted chocolate mixture into the sugar-and-egg mixture, stirring gently.
  5. In a separate bowl, sift together ½ cup (50g) cocoa powder, 1 cup (125g) all-purpose flour, and ½ teaspoon salt. Gradually fold the dry ingredients into the wet mixture until just combined, about 3-4 minutes. Do not overmix.
  6. Fold in 1 cup (175g) semi-sweet chocolate chunks and, if using, 1 teaspoon espresso powder or ½ cup (60g) chopped nuts.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 25-30 minutes, starting to check at 25 minutes by inserting a toothpick near the center; it should come out with a few moist crumbs but no wet batter.
  9. Let the brownies cool completely in the pan on a wire rack, about 1-2 hours. Use the parchment overhang to lift brownies out, slice into squares, and serve.
