  • 1 large yellow onion, finely diced
  • 34 cloves garlic, minced
  • 1 packet taco seasoning (or 23 tbsp homemade)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 jar (16 oz) medium or hot salsa
  • 2 cans (15 oz each) black beans or pinto beans, rinsed and drained
  • 1 cup low-sodium chicken broth
  • Juice of 12 fresh limes
  • 1 cup frozen or canned corn
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook for 5-7 minutes until fully browned and crispy in spots. Drain excess fat.
  2. Reduce heat to medium. Add diced onion to the pot with the beef. Cook for 3-4 minutes until softened. Add minced garlic and cook for 1 more minute until fragrant.
  3. Sprinkle taco seasoning over the beef and onion mixture. Stir well to coat and cook for 1 minute to toast the spices.
  4. Pour in diced tomatoes, tomato sauce, salsa, and chicken broth. Stir everything together, scraping up any browned bits from the bottom of the pot.
  5. Stir in the rinsed beans and corn. Bring the mixture to a gentle boil.
  6. Once boiling, reduce heat to low. Cover partially and simmer for 10-15 minutes to allow flavors to meld and soup to thicken.
  7. Remove from heat. Stir in fresh lime juice. Taste and adjust seasoning with salt and pepper if needed.
  8. Ladle into bowls and serve immediately with desired toppings.

Notes

For a vegetarian option, swap beef for lentils or extra beans and use vegetable broth. Ensure taco seasoning is certified gluten-free if necessary. The lime juice should be added at the end to preserve its brightness. If the soup is too thin, simmer uncovered for an extra 10 minutes. If too thick, add more broth.
