This Easy Apple Cider Mimosa Sangria for Fall Brunch is a quick, forgiving, and delicious cocktail that combines tart apple cider, dry Prosecco, and optional bourbon for a warm, spiced finish. Perfect for autumn gatherings, it comes together in under five minutes with simple ingredients.

  • 4 cups (960 ml) apple cider, unfiltered
  • 1 bottle (750 ml) Prosecco or dry sparkling wine, chilled
  • ½ cup (120 ml) bourbon (optional but recommended)
  • 1 large Honeycrisp or Fuji apple, thinly sliced
  • 23 cinnamon sticks
  • 23 fresh rosemary sprigs (for garnish)
  • Ice cubes (optional)
  • Optional garnishes: pomegranate seeds, pear slices, or a light dusting of cinnamon

Instructions

  1. Chill the Prosecco, apple cider, and bourbon in the fridge for at least 1 hour before serving.
  2. Wash the apple, cut it in half through the stem, remove the core, and slice each half into thin rounds (about ⅛-inch thick).
  3. Place the apple slices and cinnamon sticks in the bottom of a large glass pitcher. Tuck a rosemary sprig against the side if desired.
  4. Pour in the bourbon (if using) and the chilled apple cider. Stir gently with a long spoon to combine.
  5. Just before serving, slowly pour the chilled Prosecco into the pitcher, pouring down the side to preserve bubbles. Stir once gently.
  6. Taste and adjust: add a splash of maple syrup or honey if more sweetness is needed, or a squeeze of lemon juice if too sweet.
  7. Serve immediately in chilled glasses, garnishing each with a small rosemary sprig or pomegranate seeds if desired. Best consumed within 30 minutes for optimal fizz.

Notes

For a non-alcoholic version, swap Prosecco for sparkling apple cider or ginger ale and skip the bourbon. To make ahead, mix cider, bourbon, and fruit up to 4 hours ahead; add Prosecco just before serving.
