These easy camping lunch wraps combine creamy hummus, tender grilled chicken, and fresh veggies for a quick, portable, and satisfying meal perfect for outdoor adventures or quick weekday lunches.

Ingredients

  • Large flour tortillas or wraps
  • Cooked chicken breast, shredded or diced
  • Creamy hummus (classic garlic or roasted red pepper)
  • Fresh spinach leaves
  • Shredded carrots
  • Cucumber slices, thinly sliced
  • Cherry tomatoes, halved (optional)
  • Red onion, thinly sliced
  • Lemon juice (about 1 tablespoon / 15 ml)
  • Salt and pepper to taste
  • Olive oil (extra virgin preferred)

Instructions

  1. In a medium bowl, combine the shredded or diced cooked chicken with a drizzle of olive oil, a squeeze of fresh lemon juice (about 1 tablespoon / 15 ml), and a pinch of salt and pepper. Toss well to coat evenly.
  2. Wash and dry the spinach leaves. Thinly slice the cucumber and red onion. Halve the cherry tomatoes. Shred the carrots if not pre-shredded.
  3. Heat each wrap in a dry skillet over medium heat for 20-30 seconds per side or microwave them for 15 seconds wrapped in a damp paper towel to make them flexible.
  4. Using a spoon or spatula, spread a generous 2 tablespoons (30 g) of creamy hummus evenly over each warm tortilla, leaving about 1 inch (2.5 cm) clear around the edges.
  5. Layer the fillings starting with a handful of spinach, then add the lemony chicken mixture, followed by shredded carrots, cucumber slices, cherry tomatoes, and red onion. Keep layers even but do not overstuff.
  6. Fold the sides of the wrap slightly over the filling, then roll tightly from one edge to the other to form a neat wrap. Wrap in foil or beeswax wrap if packing for later.
  7. Serve immediately or store in a cooler for up to 24 hours. Slice in half just before eating for easier handling.

Notes

Warm tortillas before assembling to prevent cracking. Use a thin, even layer of hummus to avoid sogginess. Pat dry wet veggies to keep wraps fresh. Wrap tightly in foil or beeswax wraps for packing. Avoid overfilling to prevent wraps from falling apart.
