  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 cups whole milk
  • 3 tablespoons all-purpose flour
  • 4 medium russet potatoes, peeled and diced into ½-inch cubes
  • 1 cup shredded sharp cheddar cheese
  • ½ cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Optional toppings: shredded cheddar, crumbled bacon, sliced green onions, diced pickles, ketchup or mustard

Instructions

  1. Brown the beef: Heat olive oil in a large pot over medium-high heat. Add ground beef and cook, breaking it up, until browned (6-8 minutes). Transfer beef to a plate; leave about 1 tablespoon of fat in the pot.
  2. Sauté aromatics: Reduce heat to medium. Add diced onion and cook until soft and translucent (4-5 minutes). Add minced garlic and cook 30 seconds until fragrant.
  3. Make the base: In a small bowl, whisk together milk and flour until smooth. Pour into pot with onions and garlic, whisking constantly. Cook 2-3 minutes until slightly thickened.
  4. Add broth and potatoes: Pour in beef broth and add diced potatoes, salt, pepper, smoked paprika, and garlic powder. Stir, bring to a boil, then reduce heat to low, cover, and simmer 15-20 minutes until potatoes are fork-tender.
  5. Add beef and cream: Return browned beef to pot. Stir in heavy cream. Simmer uncovered 5 minutes. Adjust seasoning to taste.
  6. Melt in cheese: Remove pot from heat. Gradually sprinkle in shredded cheddar, stirring gently until melted and smooth. Do not boil after adding cheese.
  7. Serve immediately: Ladle into bowls and top with desired toppings.
