A quick and easy copycat recipe for Starbucks pumpkin cream cold foam coffee, made with simple ingredients in just minutes. Perfect for fall mornings or any time you crave a cozy, spiced coffee treat.

Ingredients

Scale
  • ¼ cup heavy cream (at least 36% milk fat)
  • 2 tablespoons milk (whole milk preferred, 2% works)
  • 1 tablespoon canned pumpkin puree (100% pumpkin, not pie filling)
  • 1 tablespoon maple syrup (or brown sugar)
  • ½ teaspoon pumpkin pie spice (store-bought or homemade)
  • ¼ teaspoon vanilla extract (pure vanilla preferred)
  • Pinch of sea salt
  • 1 cup strong brewed coffee, chilled (cold brew ideal)
  • Ice cubes (enough to fill glass)
  • Optional: 1 tablespoon sweetened condensed milk or simple syrup

Instructions

  1. Brew and chill your coffee. Brew a strong cup of coffee (about 2 tablespoons ground coffee per cup of water). Let cool to room temperature, then refrigerate for at least 15 minutes, or pour over ice immediately.
  2. Combine the cold foam ingredients. In a small bowl or jar, add heavy cream, milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt. Stir gently to break up pumpkin clumps.
  3. Froth until thick and creamy. Use a milk frother to blend the mixture until it doubles in volume and forms soft peaks, about 30-45 seconds. The foam should hold its shape when the frother is lifted.
  4. Fill your glass with ice. Pack a tall glass almost to the top with ice cubes.
  5. Pour the chilled coffee over the ice. Slowly pour cold coffee over the ice, leaving about an inch of space at the top for the foam.
  6. Spoon the cold foam on top. Gently dollop the pumpkin cream foam over the coffee using a spoon. Do not pour; let it float on top.
  7. Optional: Sprinkle with extra pumpkin pie spice for garnish.
  8. Serve immediately. Enjoy right away while the foam is thick and coffee is cold. Stir gently if desired, or drink through the foam with a straw.

Notes

For best foam, use cold ingredients. Chill the bowl and frother if kitchen is warm. Do not over-froth or foam may turn buttery. If foam isn’t thickening, chill cream for 5 minutes. Use 100% pumpkin puree, not pie filling. The pinch of salt is essential for flavor balance. Foam is best used immediately; unfrothed mixture can be refrigerated up to 2 days.
