A cool, refreshing cucumber salad with a tangy sour cream dressing, fresh dill, and perfectly crunchy cucumbers. This quick and easy side dish is perfect for summer cookouts and potlucks.

  • 2 large English cucumbers
  • 1 cup (240 ml) sour cream
  • 2 tablespoons (30 ml) buttermilk
  • 3 tablespoons fresh dill, chopped
  • 2 tablespoons (30 ml) fresh lemon juice
  • 1 tablespoon (15 ml) white wine vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon kosher salt, plus more for salting cucumbers
  • ½ teaspoon freshly ground black pepper
  • ½ small red onion, thinly sliced (optional)

Instructions

  1. Wash and slice the cucumbers into thin rounds, about ⅛-inch thick. If using garden cucumbers, peel them first, cut in half lengthwise, and scoop out the seeds before slicing.
  2. Place the sliced cucumbers in a colander set over a bowl or in the sink. Sprinkle with 1 tablespoon of kosher salt and toss gently. Let sit for 20 minutes to draw out excess moisture.
  3. Rinse the cucumbers briefly under cold water to remove excess salt. Spread them out on a clean kitchen towel or paper towels and pat dry gently.
  4. If using red onion, slice it thinly and soak in cold water for 10 minutes to mellow the bite. Drain and pat dry.
  5. In a large mixing bowl, combine sour cream, buttermilk, lemon juice, white wine vinegar, sugar, black pepper, and ¼ teaspoon kosher salt. Whisk until smooth.
  6. Stir in the chopped dill, reserving a small pinch for garnish.
  7. Add the dried cucumber slices and drained red onion (if using) to the dressing. Fold gently to coat evenly.
  8. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to let the flavors meld.
  9. Before serving, give the salad a gentle stir. Taste and adjust seasoning if needed. Transfer to a serving bowl and garnish with reserved dill and a crack of black pepper.

Notes

Salting the cucumbers is essential to prevent a watery dressing. Let the salad rest for at least 15 minutes before serving for best flavor. The salad can be made up to 24 hours in advance.
