A quick and satisfying snack featuring flaky puff pastry topped with juicy cherry tomatoes, fresh herbs, and optional cheese, baked to golden perfection.

  • 1 sheet puff pastry, thawed
  • 1 pint (about 250 grams) cherry tomatoes, washed and halved
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh thyme leaves, finely chopped (or rosemary or oregano)
  • 1 clove garlic, minced
  • 3 ounces (85 grams) goat cheese or feta, crumbled (optional)
  • Pinch of flaky sea salt
  • Freshly cracked black pepper, to taste
  • Balsamic glaze, optional drizzle for serving

Instructions

  1. Preheat your oven to 425°F (220°C) and position a rack in the middle.
  2. On a lightly floured surface, gently unfold the thawed puff pastry sheet. Using a sharp knife or pizza cutter, score a 1-inch (2.5 cm) border around the edges, being careful not to cut all the way through.
  3. Lightly prick the inner section (inside the scored border) with a fork to prevent it from puffing too much during baking.
  4. In a bowl, toss the halved cherry tomatoes with olive oil, minced garlic, chopped thyme, salt, and pepper until evenly coated but not soggy.
  5. Carefully transfer the puff pastry sheet onto a lined baking sheet. Spoon the tomato mixture evenly over the center section, spreading them to cover the docked area but stay within the border.
  6. If using cheese, sprinkle crumbled goat cheese or feta evenly on top.
  7. Bake for 18-22 minutes, or until the puff pastry edges are golden brown and crispy, and the tomatoes have softened but still hold shape.
  8. Remove the tart from the oven and let it cool for 5 minutes.
  9. Drizzle with balsamic glaze if desired, and sprinkle a little extra fresh thyme or flaky sea salt.
  10. Slice into squares or rectangles and serve warm or at room temperature.

Notes

If tomatoes release too much juice, blot them with a paper towel before placing on pastry to prevent sogginess. Keep an eye on the tart near the end of baking to avoid burning the edges. For vegan version, skip cheese and add nutritional yeast or roasted nuts. Gluten-free puff pastry can be used following package instructions.
