  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 packet onion soup mix (e.g., Lipton)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper (freshly ground)
  • 1/2 teaspoon dried thyme (optional)
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (for slurry)
  • 2 lbs Yukon Gold or Russet potatoes
  • 4 tablespoons butter
  • 1/2 cup warm milk
  • Salt and pepper to taste

Instructions

  1. Pat the chicken dry with paper towels. Season both sides lightly with salt, garlic powder, onion powder, black pepper, and dried thyme (if using). Place chicken in a single layer in the bottom of a 6-quart crockpot.
  2. In a medium bowl, whisk together cream of chicken soup, onion soup mix, and chicken broth until smooth. Pour over the chicken, ensuring each piece is coated.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is fork-tender and shreds easily.
  4. About 30 minutes before serving, remove chicken from crockpot using tongs. Shred with two forks on a cutting board. Return shredded chicken to the pot and stir into the gravy.
  5. In a small bowl, mix cornstarch with 2 tablespoons cold water until smooth. Pour slurry into crockpot and stir well. Cook on high, uncovered, for 15-20 minutes, stirring occasionally, until gravy thickens.
  6. While gravy thickens, peel and chop potatoes into 1-inch cubes. Place in a large pot, cover with cold water by 1 inch, and add a generous pinch of salt. Bring to a boil, then reduce to a simmer and cook 15-20 minutes until fork-tender. Drain well.
  7. Return potatoes to pot. Add butter and let melt, then pour in warm milk. Mash or whip until smooth and creamy. Season with salt and pepper to taste.
  8. Serve by spooning mashed potatoes onto plates and ladling chicken and gravy on top. Serve immediately.

Notes

For best results, use chicken thighs for extra moisture. Do not lift the lid during cooking. Taste gravy before adding extra salt due to sodium in soup mix and seasoning. Shred chicken before serving for better texture. Gravy thickens as it sits; add a splash of broth when reheating.
