  • 14.5 oz canned fire-roasted tomatoes (or regular diced tomatoes)
  • 4 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (frozen or fresh)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt to taste (about 1 teaspoon)
  • Black pepper to taste (about 1/2 teaspoon)
  • Juice of 1 lime
  • 6 corn tortillas, cut into 1/4-inch wide strips
  • 2 tablespoons olive oil
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced avocado

Instructions

  1. Dice the onion and mince the garlic. Rinse and drain the black beans. Cut tortillas into 1/4-inch wide strips. Set aside.
  2. Place chicken breasts at the bottom of the crockpot. Add diced fire-roasted tomatoes, chicken broth, black beans, corn, diced onion, minced garlic, chili powder, cumin, oregano, salt, and black pepper. Stir gently to combine.
  3. Cover and cook on low for 4-6 hours or on high for 3-4 hours until the chicken is fully cooked and tender (internal temperature 165°F).
  4. Remove the chicken breasts, shred with two forks, and return to the crockpot. Stir in fresh lime juice. Taste and adjust seasoning if needed.
  5. Toss tortilla strips with olive oil, a pinch of salt, and a sprinkle of chili powder if desired. In a hot skillet over medium heat, cook strips in batches, stirring frequently, until golden and crisp (about 3-5 minutes). Drain on paper towels.
  6. Ladle soup into bowls, top generously with crispy tortilla strips, and add optional toppings like shredded cheese or avocado.

Notes

If soup tastes flat after cooking, add more lime juice or salt to brighten flavors. For thicker soup, remove some broth before shredding chicken and simmer on stove. Make tortilla strips fresh for best texture; baking is a good alternative to frying. Adjust chili powder to control spice level.
