Easy Crockpot Lasagna Soup with Creamy Ricotta Dollop

All the rich, hearty flavor of baked lasagna in a spoonable soup form. Made in the slow cooker with simple pantry ingredients and finished with a creamy ricotta dollop, this is the ultimate set-it-and-forget-it comfort meal.

  • 1 pound ground beef (80/20)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 810 lasagna noodles, broken into 2-inch pieces (regular, not no-boil)
  • 1 cup whole milk ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Pinch of salt and pepper

Instructions

  1. Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until no longer pink (6-8 minutes). Drain excess fat if desired.
  2. Sauté aromatics: Add the diced onion to the skillet with the beef and cook for 3-4 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Transfer to slow cooker: Dump the beef and onion mixture into a 6-quart slow cooker. Add crushed tomatoes, diced tomatoes (with juice), beef broth, tomato paste, oregano, basil, red pepper flakes (if using), salt, and pepper. Stir until combined.
  4. Cook on low: Cover and cook on low for 5-6 hours or on high for 3-4 hours.
  5. Add noodles: About 30-40 minutes before serving, stir in the broken lasagna noodles, ensuring they are submerged. Cover and cook on high until tender.
  6. Make ricotta dollop: In a small bowl, mix ricotta, Parmesan, parsley, salt, and pepper. Set aside at room temperature.
  7. Serve: Ladle hot soup into bowls and top each with a generous dollop of the ricotta mixture.

Notes

Add noodles late to prevent mushiness. For leftovers, the soup thickens; add a splash of broth when reheating. The ricotta dollop should be made fresh. For freezing, consider adding noodles only to the portion you’ll eat immediately.
