  • 2 cups cooked, shredded chicken (from a rotisserie chicken works great)
  • 8 oz (226g) cream cheese, softened
  • 1/2 cup (120ml) buffalo wing sauce (like Frank’s RedHot)
  • 1/2 cup (60g) shredded sharp cheddar cheese
  • 1/4 cup (30g) crumbled blue cheese (optional, but adds amazing tang)
  • 1/4 cup (60ml) ranch or blue cheese dressing
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cans (16.3 oz / 462g each) refrigerated buttermilk biscuits (like Pillsbury Grands! Jr.)
  • 2 tablespoons (28g) unsalted butter, melted
  • 1 tablespoon (15ml) buffalo wing sauce (for brushing the tops)
  • 1 teaspoon dried parsley flakes (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper and set it aside.
  2. In a large skillet over medium heat, combine the softened cream cheese, buffalo wing sauce, garlic powder, and black pepper. Stir constantly until the cream cheese is fully melted and the mixture is smooth and bubbly, about 3-4 minutes.
  3. Reduce the heat to low. Add the shredded chicken, shredded cheddar, and crumbled blue cheese (if using). Stir until everything is well combined and the cheese is melted, about 2 minutes. Remove from heat and stir in the ranch dressing. Let the mixture cool for about 10 minutes.
  4. Open the cans of refrigerated biscuits. Separate them. You should have 16 small biscuits. On a clean work surface, lightly flatten each biscuit with your fingers into a 3-inch circle.
  5. Place about 1 generous tablespoon of the cooled buffalo chicken filling in the center of each biscuit circle. Gently gather the edges of the dough up and over the filling, pinching them together to seal. Shape into an oval, like a football. Place seam-side down on the prepared baking sheet.
  6. Once all the bites are on the baking sheet, use your fingers to gently taper the ends of each oval to make them look more like a football.
  7. Using a sharp knife or pizza cutter, make 2-3 small, shallow slits across the top of each football to create the ‘laces.’
  8. In a small bowl, mix the melted butter with the remaining 1 tablespoon of buffalo wing sauce. Brush this mixture generously over the top of each football.
  9. Bake for 12-15 minutes, or until the biscuits are golden brown and puffed up.
  10. Remove from the oven and let them cool on the baking sheet for 5 minutes. Sprinkle with dried parsley flakes. Serve warm, with extra ranch or blue cheese dressing on the side for dipping.

Notes

The filling can be made a day ahead and stored in the fridge. Just let it come to room temperature before using. For a vegetarian version, use shredded jackfruit or mashed chickpeas. To make gluten-free, use gluten-free biscuit dough. To freeze unbaked bites, place on a baking sheet and freeze until solid, then transfer to a freezer-safe bag. Bake directly from frozen, adding 5-7 minutes to the baking time.
