  • 1 cup fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup sun-dried tomatoes, chopped (oil-packed preferred)
  • ¼ cup onion, finely diced (yellow or sweet onion)
  • 1 clove garlic, minced
  • ¼ cup milk (whole or 2%, optional)
  • 1 tablespoon olive oil (extra virgin preferred)
  • Salt and pepper to taste
  • ½ teaspoon dried oregano or Italian seasoning (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin tin with olive oil or non-stick spray.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add diced onion and minced garlic; cook 2-3 minutes until soft and fragrant.
  3. Add chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
  4. In a large bowl, whisk 8 large eggs until combined. Add milk (if using), salt, pepper, and dried oregano; whisk again.
  5. Stir the cooled spinach mixture, crumbled feta, and chopped sun-dried tomatoes into the egg mixture until evenly distributed.
  6. Pour the mixture evenly into 12 muffin cups, filling each about ¾ full.
  7. Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.
  8. Let muffins cool in the tin for 5 minutes before removing. Serve warm or cooled.

Notes

Use room-temperature eggs for fluffier muffins. Rotate the pan halfway through baking if your oven bakes unevenly. For fluffier muffins, separate eggs and whip whites to soft peaks before folding in yolks. Substitute almond or plant-based milk for dairy-free option. Rinse sun-dried tomatoes to reduce sodium if needed.
