Quick and healthy no-bake energy bites made with peanut butter, honey, oats, and flaxseed. Perfect for a fast snack or on-the-go energy boost.

  • 1/2 cup (130g) natural creamy peanut butter
  • 1/3 cup (113g) honey
  • 2 tablespoons (14g) ground flaxseed
  • 1/4 cup (43g) mini chocolate chips (optional)
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine 1 cup rolled oats, 2 tablespoons ground flaxseed, 1/4 cup mini chocolate chips, 1/2 teaspoon ground cinnamon, and a pinch of salt. Stir gently to evenly distribute.
  2. Add 1/2 cup creamy peanut butter, 1/3 cup honey, and 1 teaspoon vanilla extract to the dry ingredients. Mix thoroughly with a spoon or spatula until a sticky, uniform dough forms.
  3. Check the texture by pinching a small amount between your fingers. If too dry, add honey or peanut butter teaspoon by teaspoon. If too wet, add a little more oats.
  4. Scoop out small spoonfuls (about 1 tablespoon or 15g each) and roll between your palms into balls. Place on a baking sheet or plate lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up. Alternatively, chill in the freezer for 15-20 minutes if in a hurry.
  6. Store the energy bites in an airtight container in the refrigerator and enjoy as a quick snack.

Notes

Keep hands slightly damp while rolling to prevent sticking. Use natural peanut butter without added oils or sugars for best results. Adjust texture by adding honey or oats as needed. Store chilled to maintain firmness. For vegan option, substitute honey with maple syrup and adjust texture accordingly.
