  • Water (for blanching)

Instructions

  1. Wash fresh peaches under cool running water and pat dry.
  2. Score a small ‘X’ incision at the bottom of each peach with a sharp paring knife.
  3. Bring a large pot of water to a rolling boil (about 212°F).
  4. Carefully lower peaches into boiling water using a slotted spoon and blanch for 30-60 seconds until skins loosen.
  5. Immediately transfer peaches to a bowl of ice water and let sit for about 3 minutes.
  6. Peel the skins off starting from the scored ‘X’.
  7. Cut peaches in half, remove pits, then slice or chunk as desired.
  8. Toss peach slices gently with 1-2 tablespoons of lemon juice to prevent browning.
  9. Lay peach slices on a clean towel and pat dry to remove excess moisture.
  10. Arrange peach slices in a single layer on a baking sheet lined with parchment paper and freeze for 2-3 hours until solid.
  11. Transfer frozen peaches to labeled freezer-safe bags or airtight containers, squeezing out excess air before sealing.
  12. Store in the freezer for up to 12 months.

Notes

Blanch peaches for 30-60 seconds depending on ripeness to avoid mushiness. Ice water bath is essential to stop cooking. Dry peaches thoroughly before freezing to prevent ice crystals and mushiness. Freeze in a single layer to avoid clumping. Label bags with date for best quality tracking. Skipping blanching may cause faster browning and softer texture.
