  • 1 1/2 cups water (360 ml)
  • 1/4 cup raw honey (85 grams)
  • 3 tablespoons unflavored gelatin powder (about 30 grams)
  • 1 teaspoon vitamin C powder (about 4 grams)
  • 1 tablespoon fresh lemon juice (15 ml)
  • Optional: maple syrup (as a honey substitute for vegan version)
  • Optional: a pinch of cinnamon or ginger powder

Instructions

  1. Combine 1/2 cup dried elderberries and 1 1/2 cups water in a small saucepan. Bring to a gentle boil over medium heat, then reduce to a simmer. Cook uncovered for about 25 minutes, stirring occasionally, until the liquid reduces by half and turns deep purple-red.
  2. Strain the elderberry mixture through a fine mesh strainer or cheesecloth into a bowl, pressing gently to extract liquid but avoiding bitterness. Discard solids.
  3. Pour 1/2 cup (120 ml) of the warm elderberry liquid into a mixing bowl. Sprinkle 3 tablespoons gelatin powder evenly over the surface and let it sit for 5 minutes to bloom.
  4. While gelatin blooms, stir 1/4 cup honey, 1 teaspoon vitamin C powder, and 1 tablespoon fresh lemon juice into the remaining elderberry liquid in the saucepan. Warm gently over low heat without boiling.
  5. Add the honey-vitamin C elderberry mixture into the bloomed gelatin bowl. Stir briskly until gelatin fully dissolves and mixture is smooth and glossy, about 2 minutes.
  6. Pour the mixture quickly into silicone gummy molds or an ice cube tray. Tap molds gently to remove air bubbles and level the surface.
  7. Refrigerate molds for at least 2 hours until gummies are firm.
  8. Remove gummies from molds and store in an airtight container in the refrigerator for up to two weeks.

Notes

Do not boil the elderberry mixture to avoid bitterness. Bloom gelatin properly for smooth gummies. Work quickly when pouring as gelatin sets fast. Use fresh lemon juice for best flavor. For vegan version, substitute gelatin with agar-agar powder and set at room temperature. Gummies taste better after a day or two in the fridge. Store in airtight container in fridge up to two weeks or freeze for longer storage.
