  • 1 lb ground beef (80/20 preferred)
  • 1 cup long-grain white rice, uncooked
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 14.5 oz canned diced tomatoes (with juices)
  • 2 cups beef broth (low sodium preferred)
  • 2 tablespoons olive oil
  • Salt to taste (start with 1 teaspoon)
  • Black pepper to taste
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon dried oregano (optional)
  • Fresh parsley or cilantro, a handful chopped (for garnish)

Instructions

  1. Heat olive oil over medium-high heat in a large skillet until shimmering.
  2. Add chopped onion and sauté for 3-4 minutes until translucent and slightly golden.
  3. Add minced garlic and cook for 30 seconds until fragrant, avoiding browning.
  4. Push veggies to one side and add ground beef to the empty side. Break up meat and cook 5-7 minutes until fully browned with no pink remaining.
  5. Drain excess fat if desired, leaving some for flavor.
  6. Sprinkle in salt, black pepper, smoked paprika, and oregano (if using). Stir and toast spices for about 1 minute.
  7. Add uncooked rice and canned diced tomatoes with juices. Stir to coat rice in beef mixture.
  8. Pour in beef broth and stir once more to combine.
  9. Bring mixture to a boil, then reduce heat to low and cover with a tight-fitting lid.
  10. Simmer undisturbed for 18-20 minutes, or until rice is tender and liquid absorbed.
  11. Turn off heat and let rest for 5 minutes with lid on to allow rice to fluff.
  12. Fluff rice with a fork and stir in chopped parsley or cilantro before serving.

Notes

If rice is not tender after 20 minutes, add a splash more broth or water, cover, and cook a few minutes longer. Avoid stirring rice too much during cooking to prevent mushiness. Use fresh garlic for best flavor. Letting the dish rest after cooking helps rice fluff up perfectly.
