Easy Maple Brown Butter Roasted Acorn Squash

A quick and flavorful side dish featuring tender acorn squash roasted with a rich, nutty brown butter and pure maple syrup glaze. Perfect for weeknights or holiday gatherings.

  • 2 medium acorn squash
  • 4 tablespoons unsalted butter
  • 3 tablespoons pure maple syrup
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • Optional garnish: fresh thyme or chopped pecans

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. Wash the acorn squash. If difficult to cut, microwave for 60 seconds to soften. Cut squash in half lengthwise and scoop out seeds and stringy bits.
  3. Place squash halves cut-side up on the baking sheet. Sprinkle with salt and pepper, then drizzle with olive oil and rub into the flesh.
  4. Roast squash for 20 minutes to soften.
  5. While squash roasts, melt butter in a small saucepan over medium heat. Watch closely until it foams, turns amber, and smells nutty. Remove from heat immediately.
  6. Pour brown butter into a heat-proof bowl. Whisk in maple syrup and a pinch of salt if using unsalted butter.
  7. Remove squash from oven. Spoon the brown butter mixture over the squash halves, coating evenly.
  8. Return to oven and roast for another 10-15 minutes until edges are caramelized and squash is tender when pierced with a fork.
  9. Let cool for a minute, garnish with thyme or pecans, and serve warm.

Notes

Brown butter goes from perfect to burnt quickly; remove from heat just before it looks done as residual heat continues cooking. Do not use pancake syrup; use pure Grade B or Amber maple syrup. If using salted butter, reduce added salt. For vegan version, substitute butter with vegan butter or coconut oil.
