  • ½ cup (125g) natural peanut butter (creamy or chunky)
  • ¼ cup (85g) honey
  • 2 tablespoons ground flaxseed
  • ⅓ cup (60g) mini chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • A pinch of sea salt

Instructions

  1. Gather your ingredients and measure everything precisely.
  2. In a medium bowl, combine the oats, ground flaxseed, cinnamon, sea salt, and mini chocolate chips. Stir to evenly distribute.
  3. Add the peanut butter, honey, and vanilla extract to the dry ingredients. Mix thoroughly with a spatula or spoon until uniform and sticky, about 3-4 minutes. Add a teaspoon of water or more honey if too dry.
  4. Check the texture; it should be moist and hold together when pressed. Adjust with more peanut butter, honey, or oats as needed.
  5. Roll the mixture into 1-inch (2.5 cm) balls using your hands, wetting them slightly to prevent sticking. You should get about 15-18 balls.
  6. Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  7. Store the energy balls in an airtight container in the refrigerator for up to one week or freeze for longer storage.

Notes

Use old-fashioned rolled oats for best texture. Natural peanut butter without added sugars or oils is preferred. Chilling the balls is essential to help them hold their shape. Variations include swapping peanut butter for almond or sunflower seed butter for allergies, adding dried fruit or seeds, or incorporating protein powder.
