  • ½ cup (125 g) natural peanut butter (creamy or chunky)
  • ¼ cup (45 g) mini chocolate chips (semi-sweet or dark chocolate)
  • 2 tablespoons (30 ml) honey (or maple syrup/agave for vegan)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 tablespoon (15 g) chia seeds (optional)
  • 1 tablespoon (7 g) ground flaxseed (optional)
  • A pinch of salt

Instructions

  1. Gather and measure all ingredients.
  2. In a mixing bowl, combine rolled oats, chia seeds, ground flaxseed, mini chocolate chips, and a pinch of salt.
  3. In a separate bowl, whisk together peanut butter, honey, and vanilla extract until smooth. Soften peanut butter in microwave for 10 seconds if needed.
  4. Pour the peanut butter mixture over the oat mixture and stir until evenly coated and sticky. Add a teaspoon of water or extra honey if too dry.
  5. Scoop out about 1 tablespoon (15 g) portions and roll into tight balls, yielding 15 to 18 balls.
  6. Place the balls on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  7. Enjoy immediately or store in an airtight container in the fridge for up to one week or freeze for longer storage.

Notes

Use certified gluten-free oats for gluten-free version. Substitute honey with maple syrup or agave for vegan option. Chilling is important to help the balls hold together. If mixture is too sticky, refrigerate before rolling. Optional add-ins include protein powder, chopped nuts, shredded coconut, or cocoa powder coating.
