Easy One Bowl Chocolate Chip Zucchini Bread (No Mixer)

This incredibly moist, fudgy chocolate chip zucchini bread is made in one bowl with no mixer. It’s the easiest, most forgiving quick bread, perfect for breakfast or a snack, and a great way to sneak in vegetables.

  • 1 ½ cups (190g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • 1 large egg, room temperature
  • ⅓ cup (80ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup (120g) grated zucchini, not squeezed
  • ¾ cup (130g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving an overhang on the long sides. Lightly grease exposed sides with oil or butter.
  2. Wash zucchini, trim ends, and grate on the large holes of a box grater to get 1 cup (120g). Do not squeeze out the liquid.
  3. In a large mixing bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. Add granulated sugar and packed brown sugar to the flour mixture. Stir with a spatula until combined.
  5. Make a well in the center of the dry ingredients. Add egg, vegetable oil, and vanilla extract. Stir gently until no dry flour streaks remain. Do not overmix.
  6. Fold in grated zucchini and chocolate chips (reserve 1 tablespoon for topping) until evenly distributed.
  7. Pour batter into prepared loaf pan and spread evenly. Sprinkle reserved chocolate chips on top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil at 40 minutes.
  9. Cool in pan on a wire rack for 15 minutes. Then lift bread out using parchment overhang and transfer to rack to cool completely before slicing.

Notes

Do not squeeze the liquid from the grated zucchini; it keeps the bread moist. Use room temperature egg to avoid lumpy batter. Check for doneness at 50 minutes. Overmixing will make the bread tough. For gluten-free, use a 1:1 gluten-free baking blend. For dairy-free, use dairy-free chocolate chips. The bread can be frozen for up to 3 months.
