A simple, forgiving slow cooker recipe that transforms frozen or fresh boneless chicken thighs into tender, rich garlic butter chicken with minimal prep time. Perfect for busy weeknights and meal prep.

  • 2 to 2.5 lbs boneless, skinless chicken thighs
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon fresh lemon juice
  • 1/2 cup (1 stick) unsalted butter, softened
  • 45 cloves fresh garlic, minced
  • 1 teaspoon dried parsley
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Rinse chicken thighs and pat dry. Place them in the bottom of a 4-6 quart slow cooker.
  2. In a medium bowl, combine softened butter, minced garlic, dried parsley, onion powder, garlic powder, salt, pepper, and red pepper flakes. Mix until a thick paste forms.
  3. Pour the garlic butter mixture over the chicken and rub it in to ensure every piece is coated.
  4. Pour the chicken broth around the chicken (do not stir yet).
  5. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours until chicken is fork-tender.
  6. Stir in fresh lemon juice. Taste and adjust salt if needed. Serve immediately.

Notes

If the sauce is too thick, add a splash of broth. If too thin, leave the lid off for the last 30 minutes on HIGH to reduce. For a thicker gravy-like consistency, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir in during the last 15 minutes of cooking. Can be made with frozen chicken by adding 30-60 minutes to cook time. Chicken breasts can be used but require reduced cooking time to prevent drying out.
