Easy One-Sheet Lemon Herb Salmon and Asparagus Dinner

A quick and easy one-sheet dinner featuring flaky salmon and tender asparagus roasted with fresh lemon and herbs, perfect for weeknight meals.

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 bunch fresh asparagus (about 1 lb)
  • 1 large lemon, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary, chopped
  • 2 tablespoons flat-leaf parsley, chopped
  • Salt to taste
  • Freshly ground black pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and trim the woody ends of the asparagus, then pat dry. Lay the asparagus evenly on a parchment-lined baking sheet.
  3. In a small bowl, whisk together olive oil, minced garlic, thyme, rosemary, parsley, salt, pepper, and optional red pepper flakes.
  4. Drizzle half of the herb oil over the asparagus and toss lightly to coat evenly.
  5. Pat the salmon fillets dry with paper towels and place them skin-side down on the baking sheet next to the asparagus.
  6. Brush the remaining herb oil over the salmon fillets and lay thin lemon slices on top of each fillet.
  7. Roast in the oven for 12-15 minutes. Check asparagus at 10 minutes for tenderness; salmon should flake easily with a fork when done.
  8. Optional: Squeeze fresh lemon juice over the cooked salmon and asparagus before serving.

Notes

Pat salmon dry to ensure a flaky texture. Use fresh herbs for best flavor. Rotate baking sheet halfway through cooking if needed. Do not overcrowd the pan to avoid steaming. Leftovers keep well refrigerated for up to 2 days and reheat best in the oven at 325°F for 10 minutes.
