easy rainbow fruit kabobs - featured image

These quick and fun rainbow fruit kabobs turn snack time into a craft project. Made with fresh fruit and optional marshmallows, they’re the perfect after-school treat that kids love to help make and eat.

Ingredients

  • Strawberries (fresh, hulled and halved or quartered if large)
  • Oranges or Mandarin Oranges (peeled and segmented)
  • Pineapple (fresh, cut into 1-inch chunks)
  • Kiwi (peeled and sliced into rounds or chunks)
  • Blueberries (fresh)
  • Purple Grapes (seedless)
  • Mini Marshmallows (optional but highly recommended)
  • Wooden Skewers (6 to 8 inches long)

Instructions

  1. Wash and dry all your fruit. Pat everything dry with a paper towel.
  2. Prep the fruit: hull strawberries and cut in half or quarters; peel kiwi and slice into 1/2-inch rounds, then cut each round in half; peel and segment oranges; cut pineapple into 1-inch chunks; rinse blueberries and grapes.
  3. Line up your fruit in rainbow order: strawberries (red), oranges (orange), pineapple (yellow), kiwi (green), blueberries (blue), grapes (purple).
  4. Start skewering: take a wooden skewer and thread the fruit in rainbow order. Begin with a strawberry, then add an orange segment, then a pineapple chunk, then a piece of kiwi, then a few blueberries, and finally a grape. Add a mini marshmallow between each fruit layer if desired.
  5. Repeat until all fruit is used, making about 8 to 10 kabobs. Leave a little space at the bottom for easy holding.
  6. Arrange on a platter. If not serving immediately, cover with plastic wrap and refrigerate for up to 4 hours.

Notes

Keep fruit pieces uniform in size (about 1 inch) for best presentation. Don’t skip the marshmallows—they act as spacers and add sweetness. Let kids help assemble for more fun. Avoid apples and pears as they brown quickly. For a savory twist, replace marshmallows with small cubes of cheddar or mozzarella.
