  • 2 tbsp Dijon mustard
  • 1 tbsp whole grain mustard (optional but recommended)
  • 1 tbsp fresh lemon juice (about half a lemon)
  • 1 garlic clove, minced
  • 1 tsp soy sauce or tamari (optional)
  • Optional vegetables to roast alongside:
  • 1 cup cherry tomatoes, halved
  • 1 small zucchini, sliced into rounds
  • 1 red bell pepper, sliced
  • 1 small red onion, cut into wedges

Instructions

  1. Preheat your oven to 400°F (200°C). Line your sheet pan with parchment paper or foil to catch drips and make cleanup easier.
  2. In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, lemon juice, minced garlic, and soy sauce until smooth and well combined.
  3. Pat the salmon fillets dry with paper towels. Lightly drizzle olive oil over each fillet, then sprinkle with salt and pepper on both sides.
  4. Place the salmon fillets skin-side down (if skin on) on the prepared sheet pan. If roasting veggies, scatter them around the salmon in a single layer.
  5. Using a pastry brush or spoon, generously coat each salmon fillet with the honey Dijon mustard glaze.
  6. Roast in the oven for 12-15 minutes, depending on thickness, until the salmon flakes easily with a fork but is still moist inside. Check veggies for tenderness if included.
  7. Optional: Switch oven to broil and broil salmon for 1-2 minutes for a caramelized finish, watching carefully to prevent burning.
  8. Let the salmon rest for 2-3 minutes after removing from the oven to allow juices to redistribute. Serve warm with roasted veggies or a fresh side salad.

Notes

Do not overcook the salmon to keep it tender and juicy. Pat salmon dry before oiling for crispier skin. Use fresh lemon juice for best flavor. The glaze can be prepared a day ahead and stored in the fridge. Broiling at the end is optional for a caramelized finish. For soy-free, substitute soy sauce with coconut aminos or omit.
