  • 8 oz (225g) full-fat cream cheese, cubed
  • 1 cup (240ml) ranch dressing
  • 1/2 cup (120ml) hot sauce (e.g., Frank’s RedHot)
  • 3 cups (450g) cooked and shredded chicken breast
  • 1 1/2 cups (170g) cheddar cheese, shredded
  • 1/4 cup (60ml) blue cheese dressing (optional)
  • Tortilla chips for serving
  • Celery sticks for serving

Instructions

  1. Prepare the chicken: If using raw chicken, cook in slow cooker with 1 cup water on low for 6 hours or high for 3 hours until 165°F. Shred with forks. If using rotisserie chicken, shred it directly. Pat dry to remove excess moisture.
  2. Combine base ingredients: In a large bowl, whisk softened cream cheese, ranch dressing, hot sauce, and melted butter until smooth.
  3. Assemble in slow cooker: Transfer mixture to slow cooker. Add shredded chicken and half of the cheddar cheese. Stir gently to coat.
  4. Cook on low: Cover and cook on low for 2 hours without lifting the lid. Stir after 2 hours; it should be mostly smooth but thick.
  5. Add remaining cheese: Sprinkle remaining cheddar cheese on top. Cover and cook on low for another 30-60 minutes until cheese is melted and dip is bubbling.
  6. Final stir and serve: Stir dip one final time. Adjust consistency with milk or ranch if needed. Serve warm with tortilla chips and celery sticks.

Notes

Use full-fat block cream cheese for best melting results. Shred cheddar cheese from a block rather than using pre-shredded cheese to avoid anti-caking agents that prevent smooth melting. Do not freeze this dip as the dairy will separate and become grainy. If the dip is too thin, cook uncovered on low for 15-30 minutes to evaporate moisture.
