Easy Slow Cooker White Chicken Chili (Best Game Day Recipe)

This creamy, flavorful white chicken chili is made in the slow cooker with simple pantry ingredients. It’s perfect for game day, potlucks, or a cozy dinner, and it’s even better the next day.

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 (15-ounce) cans Great Northern beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 2 (4-ounce) cans diced green chiles (mild or medium)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano (preferably Mexican oregano)
  • 1 teaspoon chili powder
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 1 cup corn kernels (frozen or canned, drained if canned)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Optional toppings: shredded Monterey Jack cheese, sour cream, sliced jalapeños, tortilla chips, avocado

Instructions

  1. Prep your ingredients: dice the onion, mince the garlic, drain and rinse the beans, open the cans of green chiles.
  2. Layer the ingredients in the slow cooker: place the chicken breasts at the bottom. Add the diced onion, minced garlic, drained beans, green chiles, corn, cumin, oregano, chili powder, salt, and pepper. Pour the chicken broth over everything. Do not stir.
  3. Cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fork-tender.
  4. Remove the chicken breasts to a cutting board and shred with two forks. Alternatively, use a hand mixer in the slow cooker, pulsing 3-4 times.
  5. For a creamier texture, scoop out about 1 cup of the beans and a bit of broth, blend until smooth with an immersion blender or regular blender, then stir back into the slow cooker.
  6. Return the shredded chicken to the slow cooker and stir. Taste and adjust seasonings (add more salt or cumin if needed).
  7. Stir in the lime juice and half the chopped cilantro. Reserve the rest for garnish.
  8. Turn the slow cooker to warm and let the chili rest for 10 minutes before serving.
  9. Ladle into bowls and serve with desired toppings.

Notes

For best results, cook on low. Do not lift the lid during cooking. Season in layers—add salt at the beginning and adjust at the end. If using undrained beans, reduce broth by ½ cup. This chili tastes even better the next day. To freeze, cool completely and store in freezer-safe containers for up to 3 months.
