Instructions

  1. Preheat oven to 350°F (175°C). Grease a 4×2-inch mini loaf pan with butter or non-stick spray, optionally lining the bottom with parchment paper.
  2. Peel ripe bananas and mash them thoroughly in a mixing bowl until almost smooth with a few small lumps remaining.
  3. Stir melted butter into the mashed bananas. Add sugar, egg, and vanilla extract, whisking vigorously until the mixture is glossy and uniform.
  4. Add flour, baking soda, salt, and cinnamon to the wet ingredients.
  5. Gently fold the dry ingredients into the wet mixture using a spatula or spoon until just combined and no white streaks remain. Do not overmix.
  6. Pour batter into the prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
