  • 2 tablespoons cornstarch

  • 2 cups Bisquick baking mix
  • 3/4 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, drain the peaches slightly, reserving about 1/2 cup of syrup. Add sugar, cornstarch, cinnamon, and lemon juice. Stir gently to combine.
  3. Transfer the peach mixture, including syrup, into a greased 9×13-inch baking dish and spread evenly.
  4. In a separate bowl, stir together Bisquick mix, milk, melted butter, sugar, and vanilla extract until just combined. Do not overmix; lumps are okay.
  5. Drop spoonfuls of the topping batter evenly over the peach filling, leaving some peaches exposed for a rustic look.
  6. Bake uncovered for 40-45 minutes until the topping is golden brown and the peach filling is bubbly.
  7. Let the cobbler cool for at least 15 minutes before serving.

Notes

If topping browns too quickly, tent loosely with foil after 30 minutes. Do not skip lemon juice to balance sweetness. For gluten-free, substitute Bisquick with gluten-free baking mix. Use almond or oat milk for dairy-free. Fresh peaches can be used but may require more cornstarch to thicken juices. Let cobbler rest 15 minutes before serving to set filling.
