A simple and delicious homemade peach jam recipe that requires no pectin, using natural fruit pectin and warm spices for a perfect preserve.

  • 4 cups fresh peaches, peeled and chopped (about 67 medium peaches)
  • 1 to cups granulated sugar (adjust based on peach sweetness)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 medium cinnamon stick
  • ¼ teaspoon ground cloves (optional)
  • ¼ cup water

Instructions

  1. Wash, peel, and chop peaches into roughly ½-inch pieces. To peel easily, blanch peaches in boiling water for 30 seconds, then plunge into ice water.
  2. In a large saucepan, combine chopped peaches, sugar, lemon juice, and water. Stir gently and let sit for 10-15 minutes to macerate.
  3. Add the cinnamon stick and ground cloves to the mixture.
  4. Place the saucepan over medium heat and bring to a gentle boil. Reduce heat to medium-low and simmer uncovered, stirring frequently, for 30-40 minutes until jam thickens and peaches break down.
  5. Test for doneness by placing a spoonful on a chilled plate; if it wrinkles and doesn’t run, the jam is ready.
  6. Remove the cinnamon stick. Ladle hot jam into sterilized jars, leaving ¼-inch headspace. Wipe rims clean and seal with lids.
  7. Let jars cool to room temperature, then refrigerate. Jam will thicken further as it cools.

Notes

Stir frequently to prevent burning. Use ripe but firm peaches for best texture. Test jam set with chilled plate method. Sterilize jars for longer freshness. Let jam cool uncovered briefly before sealing to avoid condensation.
