Ingredients

  • Unsalted butter, softened
  • Granulated sugar
  • Egg yolks
  • Vanilla extract
  • All-purpose flour
  • Baking powder
  • Salt
  • Powdered sugar (confectionersโ€™ sugar), sifted
  • Meringue powder
  • Warm water
  • Black gel food coloring
  • Lemon juice or cream of tartar

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (2-3 minutes).
  2. Add the egg yolks and vanilla extract, mixing until combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  5. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  6. Preheat oven to 350ยฐF (175ยฐC) and line baking sheets with parchment paper.
  7. Divide dough in half. Roll out one half to 1/4-inch thickness on a lightly floured surface.
  8. Cut out circles using a round cookie cutter or glass. Place on baking sheets with space for spreading.
  9. Bake for 12-15 minutes until edges are light golden brown. Centers should still look soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  11. In a clean bowl, whisk meringue powder with warm water until foamy.
  12. Add sifted powdered sugar and cream of tartar. Beat on medium-high speed for 5-7 minutes until stiff peaks form.
  13. Divide icing into small bowls. Leave one white; add black gel food coloring to others and stir until deep black.
  14. Spread a thin, even layer of white royal icing over a cooled cookie.
  15. Dot black icing randomly in the center of the white icing.
  16. Drag a toothpick from the center outward to the edges, then from edges inward to the center to create a web pattern.
  17. Rotate the cookie and repeat to create concentric circles. Wipe toothpick clean between designs.
  18. Let icing dry completely for 2-4 hours.

Ensure cookies are completely cool before icing to prevent melting. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use aquafaba instead of meringue powder and egg yolks.
