Ingredients

Scale
  • 46 slices prosciutto
  • 46 slices Genoa salami
  • 4 slices soppressata (optional)
  • 4 oz Brie or Camembert
  • 4 oz aged Gouda or Manchego
  • 2 oz Gorgonzola or Roquefort (optional)
  • 2030 crackers (mix of water crackers and seeded crisps)
  • 46 slices baguette, lightly toasted
  • 2 tablespoons honey
  • 1 cup fresh figs, sliced apples, pears, or red grapes
  • 3 tablespoons fig jam or apricot jam
  • 1/2 cup Castelvetrano or Kalamata olives
  • 1/4 cup pickled onions or cornichons
  • 1/4 cup toasted almonds or walnuts
  • Fresh rosemary or thyme sprigs (optional)

Instructions

  1. Take cheeses out of the fridge and let them come to room temperature for at least 20 minutes.
  2. Place small bowls for honey, jam, olives, and pickled onions on the board, spacing them out.
  3. Place cheeses on the board: cut Brie into wedges, slice aged Gouda into thin triangles, and crumble blue cheese into small chunks. Space them evenly.
  4. Fold prosciutto slices into ribbons and place next to Brie. Fold salami slices in half twice and fan them out. Pile soppressata in a small heap.
  5. Arrange crackers and bread slices in small clusters around the cheeses and meats.
  6. Fill gaps with fruit and nuts, tucking grapes into small spaces and fanning out apple slices.
  7. Drizzle honey over Brie or blue cheese. Sprinkle fresh herbs over the board for color.
  8. Serve immediately with small plates and napkins.

Notes

Let cheese come to room temperature for best flavor. Keep wet ingredients in separate bowls to prevent soggy crackers. Customize meats and cheeses to your preference. For a gluten-free version, use rice crackers or cucumber slices instead of bread and crackers.
