A small batch blueberry peach jam infused with real vanilla bean, balancing the sweetness of peaches with the tartness of blueberries and a subtle vanilla warmth. Perfect for quick, easy, and flavorful homemade jam.

Ingredients

Scale
  • 1 ½ cups fresh blueberries (225g), washed
  • 2 medium ripe peaches (about 1 ½ cups diced, 225g), peeled and chopped
  • ¾ cup granulated sugar (150g), adjust if fruit is very sweet
  • 2 tablespoons fresh lemon juice (30ml)
  • 1 whole vanilla bean, split lengthwise and seeds scraped (or 1 teaspoon pure vanilla extract)
  • ¼ cup water (60ml)

Instructions

  1. Peel the peaches by scoring a small “X” at the bottom and blanching in boiling water for 30 seconds, then plunge into ice water. Skins should slip off. Dice peaches into roughly ½-inch pieces. Rinse blueberries gently. (Approximate time: 10 minutes)
  2. Split the vanilla bean lengthwise with a sharp knife. Scrape the seeds out with the back of the knife into a small bowl. Set seeds and pods aside.
  3. In a medium non-reactive saucepan, combine peaches, blueberries, sugar, lemon juice, water, vanilla seeds, and the empty vanilla pod. Stir gently and let sit for 10 minutes to macerate.
  4. Place saucepan over medium heat and bring to a gentle boil, stirring frequently. Reduce heat to low and simmer uncovered, stirring every 2-3 minutes and skimming off foam. Simmer for 20-25 minutes until jam thickens.
  5. Test jam set by placing a spoonful on a chilled plate; if it wrinkles when pushed with a finger and doesn’t flood back, it’s ready. If not, simmer a few more minutes and test again.
  6. Remove and discard vanilla pods (or rinse and dry to reuse for sugar infusions).
  7. Ladle hot jam into sterilized glass jars, leaving about ¼ inch headspace. Wipe rims clean, seal, and let cool to room temperature before refrigerating.

Notes

Use fresh, ripe fruit for best results. Stir often to prevent burning. Skim foam for clearer jam. Test set with wrinkle test or candy thermometer (~220°F). Vanilla pods can be reused for sugar infusions. Frozen fruit can be used if thawed first. For lower sugar, reduce sugar by 25% but expect softer jam and shorter shelf life. Slow cooker method possible (2-3 hours on low).
