  • 2 tablespoons honey
  • 1 tablespoon hot sauce (e.g., Frank’s RedHot)
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon apple cider vinegar
  • Optional garnishes: chopped fresh parsley or green onions

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat 2 pounds of chicken wings dry with paper towels.
  3. In a medium bowl, combine 1 tablespoon aluminum-free baking powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Add the wings and toss until evenly coated.
  4. Place the wings on a wire rack set over a rimmed baking sheet. If you don’t have a rack, place wings directly on the baking sheet but flip halfway through cooking.
  5. Bake for 35-40 minutes until wings are golden brown and crispy, flipping once halfway through. The internal temperature should reach 165°F (74°C).
  6. While wings bake, whisk together 1/2 cup BBQ sauce, 2 tablespoons honey, 1 tablespoon hot sauce, 1 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper, 1/2 teaspoon garlic powder, and 1 tablespoon apple cider vinegar in a small bowl.
  7. Brush the crispy wings generously with the firecracker BBQ glaze on both sides.
  8. Broil the glazed wings for 3-5 minutes to caramelize the glaze, watching closely to prevent burning.
  9. Serve immediately, garnished with chopped parsley or green onions if desired.

Notes

Use aluminum-free baking powder for crispiness without chemical aftertaste. Pat wings dry thoroughly to remove moisture. Watch the broil step carefully to avoid burning the glaze. Wings can be reheated in a 375°F oven for 10 minutes to maintain crispiness. The glaze can be prepared a day ahead and stored in the fridge.
