Ingredients

Scale
  • 2 cups all-purpose flour (250g)
  • 1/2 cup granulated sugar (100g)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup buttermilk (120ml or 1/2 cup)
  • 2 large eggs, room temperature
  • 1/4 cup unsalted butter, melted (60g or 1/4 cup)
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (120g)
  • 3 tbsp pure maple syrup (Grade A)
  • 2 tbsp milk (or dairy-free alternative)
  • 1/2 tsp vanilla extract
  • 6 slices thick-cut bacon
  • Extra maple syrup for drizzling (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lay the bacon slices on a wire rack placed over a baking sheet. Bake for 15-20 minutes until crispy, flipping once halfway through. Remove and drain on paper towels. Once cooled, chop into small pieces.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat the eggs, then add buttermilk, melted butter, and vanilla extract. Pour the wet ingredients into the dry and gently fold until just combined. Don’t overmix.
  3. Preheat your oven to 350°F (175°C). Lightly grease your donut pan or use non-stick spray.
  4. Spoon the batter into each donut cavity, filling about 3/4 full. Sprinkle the chopped bacon evenly on top of each donut before baking.
  5. Bake for 12-15 minutes, or until the edges are golden and a toothpick inserted comes out clean. Watch closely after 12 minutes to avoid drying out.
  6. Let the donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. In a medium bowl, whisk powdered sugar, maple syrup, milk, and vanilla extract until smooth and pourable. Adjust consistency by adding more milk if too thick.
  8. Dip the top of each cooled donut into the glaze, letting excess drip back into the bowl. Place back on the wire rack. Sprinkle a few bacon bits on top of the glaze before it sets.
  9. Allow the glaze to set for about 10 minutes before serving. Optionally, add a light drizzle of pure maple syrup right before serving.

Notes

Use thick-cut bacon for a satisfying crunch. Bake bacon on a wire rack to keep it crispy. Don’t overmix the batter to avoid dense donuts. Cool donuts completely before glazing to prevent glaze from melting off. For gluten-free, substitute flour with a 1:1 gluten-free baking flour blend. For dairy-free, use coconut or almond milk alternatives. Muffin pans can substitute donut pans with a shape change but same flavor.
