Ingredients

  • Large flour tortillas (8-inch)
  • Cream cheese, softened (8 oz / 225 g)
  • Rainbow bell peppers (red, orange, yellow, green), thinly sliced
  • Carrot, peeled and julienned
  • Cucumber, seeded and thinly sliced lengthwise
  • Baby spinach leaves or mixed salad greens
  • Fresh herbs (optional): chopped dill or chives
  • Lemon zest (from 1 lemon)
  • Garlic powder (1/2 teaspoon)
  • Salt and pepper, to taste
  • Optional add-ons: thin slices of turkey or ham; gluten-free tortillas

Instructions

  1. Soften and flavor the cream cheese: In a mixing bowl, combine the softened cream cheese with lemon zest, garlic powder, salt, and pepper. Mix until smooth and well blended (about 3 minutes).
  2. Prepare your veggies: Wash and dry all vegetables thoroughly. Slice the bell peppers into thin strips about 2-3 inches long and 1/4 inch wide. Julienne the carrot into matchstick-sized pieces. Peel and seed the cucumber, then slice into thin long strips.
  3. Lay out the tortilla flat on a clean surface or cutting board.
  4. Spread the cream cheese mixture evenly over the entire surface of the tortilla, leaving about 1/2 inch border around the edges.
  5. Layer on the veggies: arrange the bell peppers, carrots, cucumber strips, and spinach leaves in a single layer, covering the cream cheese. Add fresh herbs if using.
  6. Roll it up tight: Beginning at the edge with the veggies, gently but firmly roll the tortilla into a log shape. Wrap the pinwheel log tightly in plastic wrap or parchment paper.
  7. Chill to set: Place the wrapped roll in the fridge for at least 30 minutes to firm up the cream cheese.
  8. Slice into pinwheels: After chilling, unwrap and use a sharp serrated knife to slice into 1-inch thick rounds.
  9. Arrange in your bento box and serve with fresh fruit, nuts, or a small dip cup if desired.

Notes

Use room temperature cream cheese for easier spreading. Do not overfill the tortilla to avoid difficulty rolling. Chill the rolled pinwheels before slicing to keep the shape intact. Use a serrated knife with a gentle sawing motion to slice cleanly without squashing. Veggies should be sliced thin and dry to prevent sogginess. Can be prepared up to 24 hours ahead.
