Fresh Fig and Goat Cheese Flatbread with Balsamic Honey Drizzle

A quick and easy flatbread featuring tangy goat cheese, fresh figs, and a sweet-savory balsamic honey drizzle, perfect for entertaining or a flavorful weeknight meal.

  • 1 package pre-made pizza or flatbread dough (about 1012 oz / 280340 g)
  • 1 tablespoon olive oil (for brushing)
  • Salt and freshly cracked black pepper, to taste
  • 45 fresh figs, sliced thin
  • 4 oz (115 g) goat cheese, softened
  • 1/4 cup walnuts, toasted and chopped (optional)
  • Fresh thyme leaves or rosemary, a small handful
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • A pinch of salt

Instructions

  1. Preheat your oven to 450°F (230°C). If using a pizza stone, place it in the oven to heat up for about 30 minutes.
  2. Prepare the balsamic honey drizzle: In a small saucepan over medium heat, combine balsamic vinegar, honey, and a pinch of salt. Stir occasionally and simmer for 5-7 minutes until slightly thickened. Remove from heat and set aside to cool.
  3. On a lightly floured surface, roll or stretch the flatbread dough into an oval or rectangle about 10×14 inches (25×35 cm), about 1/4 inch (6 mm) thick.
  4. Place the shaped dough onto a parchment-lined baking sheet or pizza peel. Brush the surface with olive oil, then sprinkle lightly with salt and cracked black pepper.
  5. Spread the softened goat cheese evenly over the dough, leaving about a 1/2-inch border around the edges.
  6. Arrange the thinly sliced fresh figs evenly over the goat cheese, leaving space between slices.
  7. Scatter toasted walnuts and fresh thyme leaves over the figs.
  8. Bake the flatbread on the preheated stone or baking sheet for 12-15 minutes until edges are golden and goat cheese is bubbly.
  9. Remove from oven and immediately drizzle the balsamic honey reduction over the top.
  10. Let rest for 2-3 minutes before slicing into squares or strips. Serve warm or at room temperature.

Notes

If edges brown too quickly, tent loosely with foil halfway through baking. Watch figs closely to avoid overbaking. Soften goat cheese to room temperature before spreading. Toast walnuts for added crunch. Balsamic honey drizzle can be made ahead and cooled. For gluten-free, use gluten-free dough; for dairy-free, substitute goat cheese with vegan cheese or cashew spread.
