A simple, fresh, and flavorful snack board featuring creamy whipped feta, briny olives, and crisp crudités, perfect for poolside gatherings and summer entertaining.

Ingredients

  • 8 oz feta cheese, crumbled
  • 1/4 cup plain Greek yogurt
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil, plus extra for drizzling
  • 1 teaspoon lemon zest
  • Freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • 1 cup mixed olives (Kalamata, Castelvetrano, or favorites)
  • 1/2 cup cornichons or small pickles
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, sliced into rounds or sticks
  • 2 large carrots, peeled and cut into sticks
  • 1 red bell pepper, sliced into strips
  • 1 cup snap peas or green beans, blanched briefly (optional)
  • Warm pita bread or crackers
  • Fresh herbs like dill or parsley for garnish

Instructions

  1. Prepare the whipped feta: In a food processor, combine crumbled feta, Greek yogurt, minced garlic, olive oil, lemon zest, and black pepper. Blend on high speed for 1-2 minutes until creamy and smooth, scraping down sides as needed. Adjust seasoning to taste.
  2. Prep the crudités: Wash and dry all vegetables. Slice cucumber, carrots, and bell pepper into sticks or rounds. Halve cherry tomatoes. Blanch snap peas or green beans in boiling water for 1-2 minutes, then plunge into ice water to keep crisp.
  3. Arrange the board: Place whipped feta in a small bowl near the center of a serving board. Arrange olives and cornichons in separate small bowls. Fan out the crudités around the bowls, mixing colors and shapes. Add pita wedges or crackers on one side.
  4. Garnish and drizzle: Scatter fresh herbs over the board and drizzle extra virgin olive oil over the whipped feta before serving.
  5. Serve immediately: Best enjoyed fresh. Whipped feta and vegetables can be prepared a few hours ahead and assembled just before serving. Keep chilled until serving.

Notes

If feta is crumbly and dry, soak in water for 10 minutes before blending for creamier texture. Use lemon zest to brighten flavor. For vegan version, substitute feta and yogurt with soaked cashews blended with lemon juice, garlic, and nutritional yeast. Store whipped feta in airtight container up to 3 days. Keep veggies fresh wrapped in damp paper towels and refrigerated. Avoid microwaving feta; serve cold or room temperature.
