Fresh Roasted Nectarine Toast with Whipped Labneh and Za’atar Honey

A simple and delicious breakfast toast featuring caramelized roasted nectarines, fluffy whipped labneh, and a drizzle of za’atar-infused honey for a perfect balance of sweet, tangy, and herby flavors.

  • 3 medium nectarines, halved and pitted
  • 2 tablespoons honey
  • 1 tablespoon honey infused with za’atar spice
  • 1 cup chilled labneh
  • 1 teaspoon freshly squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon za’atar spice
  • Pinch of sea salt
  • 4 slices rustic bread (sourdough or country loaf), toasted

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and halve the nectarines, removing the pits. Place them cut-side up on the baking sheet.
  3. Drizzle about 1 tablespoon of extra virgin olive oil over the cut surfaces of the nectarines.
  4. Drizzle 2 tablespoons of honey evenly over the nectarines, then sprinkle a pinch of sea salt.
  5. Roast the nectarines in the oven for 15-18 minutes until soft, golden, and bubbling.
  6. While the nectarines roast, combine 1 cup chilled labneh with 1 teaspoon lemon juice in a medium bowl and whip with a hand mixer or whisk for 2-3 minutes until light and airy.
  7. Warm 1 tablespoon of honey gently in a small saucepan or microwave-safe bowl, then stir in 1 teaspoon za’atar spice to make za’atar honey.
  8. Toast 4 slices of rustic bread until golden and crisp.
  9. Spread a generous layer of whipped labneh on each toast slice. Top each with 2 halves of warm roasted nectarines.
  10. Drizzle the za’atar honey over the nectarines and labneh. Optionally, sprinkle extra za’atar spice or flaky sea salt on top.
  11. Serve immediately, warm or at room temperature.

Notes

If nectarines are very juicy, blot with a paper towel before placing on toast to avoid sogginess. Watch roasting time as it varies by oven and fruit ripeness. Whip labneh until fluffy but not too loose. Za’atar honey can be made by warming honey and stirring in za’atar spice. Toast bread well to prevent sogginess.
