  • 2 cups (300g) frozen strawberries
  • 1/4 cup (15g) dried hibiscus flowers
  • 4 cups (1 liter) filtered water
  • 2 tablespoons (30ml) fresh lime juice
  • 2 to 3 tablespoons (30-45ml) honey or agave syrup
  • 2 tablespoons (30g) chia seeds
  • Ice cubes (optional)

Instructions

  1. Bring 4 cups (1 liter) of water to a near boil (about 200°F or 93°C). Pour over 1/4 cup (15g) dried hibiscus flowers in a heatproof pitcher. Cover and steep for 15 minutes until the water turns deep ruby red with a fragrant, tart aroma.
  2. Strain the hibiscus infusion using a fine mesh strainer or cheesecloth, pressing gently to extract as much liquid as possible. Discard the petals.
  3. In a blender, add 2 cups (300g) frozen strawberries and 2 tablespoons (30ml) fresh lime juice. Blend until smooth, about 30 seconds.
  4. Add 2 to 3 tablespoons (30-45ml) honey or agave syrup to the strawberry mixture. Blend for another 10 seconds. Taste and adjust sweetness as desired.
  5. Pour the strawberry puree into the hibiscus infusion and stir well until combined.
  6. Stir in 2 tablespoons (30g) chia seeds evenly. Let the mixture sit for at least 10 minutes at room temperature or refrigerate for 30 minutes to allow chia seeds to swell and develop a gel-like coating.
  7. Serve over ice cubes in glasses or mason jars. Garnish with fresh strawberry slices or a lime wedge if desired.

Notes

Do not skip the full 15-minute steeping time for hibiscus to avoid weak flavor. Stir chia seeds well to prevent clumping and let them soak for at least 10 minutes for best texture. Store refrigerated and consume within 2-3 days. Shake gently before serving to redistribute chia seeds. For a vegan version, use agave syrup instead of honey. You can substitute fresh strawberries for frozen when in season. If chia seeds clump, stir or shake before serving. Avoid reheating; serve cold.
