  • 1 cup (250g) whole-milk ricotta cheese
  • 23 tablespoons honey (raw or floral, like clover or wildflower)
  • 1 cup (150g) fresh strawberries, hulled and sliced
  • 1/4 cup (15g) microgreens (peppery arugula or radish microgreens preferred)
  • 4 slices rustic bread (sourdough or country loaf), toasted
  • Optional: zest of 1 lemon
  • Pinch of sea salt

Instructions

  1. Place 1 cup (250g) of whole-milk ricotta in a medium bowl. Add 1 tablespoon of honey and, if using, the zest of one lemon.
  2. Using a hand mixer or stand mixer, whip on medium speed for 2-3 minutes until smooth, creamy, and slightly fluffy. If the ricotta feels too thick, add a teaspoon of milk to loosen it up.
  3. Toast 4 slices of rustic bread (about 1/2-inch thick) until golden brown and crisp, either in a toaster or under the broiler for 2-3 minutes per side.
  4. Hull and slice 1 cup (150g) of fresh strawberries into thin slices. If using frozen, thaw and drain excess liquid.
  5. Spread a generous 1/4 cup (about 60g) of whipped ricotta evenly over each toast slice.
  6. Drizzle about 1/2 tablespoon of honey over the ricotta on each slice.
  7. Arrange the sliced strawberries on top of the ricotta.
  8. Scatter about 1 tablespoon of microgreens over each piece.
  9. Finish with a light sprinkle of sea salt to balance the sweetness.
  10. Serve immediately for best texture and flavor.

Notes

Whip ricotta for at least 2 minutes for a silky texture. Toast bread well to avoid sogginess. Assemble just before serving to maintain crispness. For vegan version, substitute ricotta with whipped cashew or almond cheese and honey with maple syrup. Use gluten-free bread for gluten-free option.
