  • ½ cup (90g) dark chocolate chunks or chips (at least 70% cacao)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper with some overhang for easy removal.
  2. Shred the zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. Set aside.
  3. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
  4. In a large bowl, beat the sugar and oil until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and Greek yogurt until the batter is silky.
  5. Fold the dry ingredients into the wet ingredients gently until just combined. Avoid overmixing.
  6. Fold in the shredded zucchini and dark chocolate chunks until evenly distributed.
  7. Pour the batter into the prepared pan and spread evenly with a spatula.
  8. Bake for 30-35 minutes or until a toothpick inserted near the center comes out with moist crumbs (not wet batter). Start checking at 28 minutes to avoid overbaking.
  9. Let the brownies cool completely in the pan on a cooling rack before slicing, about 45 minutes.
