These fudgy double chocolate zucchini muffins are moist and rich with a gooey chocolate chip swirl, perfect for a wholesome yet indulgent treat.

  • 1 ¾ cups all-purpose flour (220g)
  • ½ cup unsweetened cocoa powder (50g), Dutch-processed preferred
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup granulated sugar (200g)
  • ⅓ cup vegetable oil (80ml), neutral oil like canola
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 ½ cups shredded zucchini (about 1 medium zucchini), squeezed dry
  • ½ cup buttermilk (120ml) or milk + 1 tsp lemon juice
  • ¾ cup semi-sweet or dark chocolate chips (135g)
  • 2 tablespoons butter (28g), melted
  • 2 tablespoons sugar (25g)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.
  2. Grate zucchini finely and squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.
  3. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  4. In another bowl, whisk sugar, vegetable oil, and eggs until smooth. Stir in vanilla extract and buttermilk.
  5. Fold the squeezed zucchini into the wet ingredients gently.
  6. Slowly add dry ingredients to wet ingredients, folding carefully until just combined without overmixing.
  7. In a small bowl, combine chocolate chips, melted butter, and sugar to form a thick paste for the swirl.
  8. Fill muffin cups about two-thirds full with batter. Drop small dollops of the chocolate chip swirl on top and gently swirl with a skewer or knife.
  9. Bake for 20–25 minutes until a toothpick inserted comes out with a few moist crumbs. Tops should look set and slightly glossy.
  10. Cool muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Squeeze out zucchini moisture thoroughly to avoid soggy muffins. Use room temperature eggs and buttermilk for better texture. Fold ingredients gently to keep muffins light and fudgy. Swirl chocolate chip mixture gently on top for gooey pockets. If batter is too thick, add a splash more buttermilk. Cool muffins completely to maintain texture.
