  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano

  • 2 cups cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/3 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil (for dressing)
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper, to taste

Instructions

  1. In a medium bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Toss the chicken cubes in this mixture until well coated. Cover and refrigerate for at least 30 minutes to marinate.
  2. While the chicken marinates, wash and prep the vegetables: halve cherry tomatoes, dice cucumber, thinly slice red onion, and halve Kalamata olives. Toss all into a large bowl with chopped parsley.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper until emulsified. Adjust seasoning to taste.
  4. Thread the marinated chicken pieces onto skewers, leaving space between pieces for even cooking.
  5. Preheat grill or grill pan over medium-high heat. Grill chicken skewers for 5-6 minutes per side until internal temperature reaches 165°F (74°C) and grill marks appear.
  6. Pour dressing over salad and toss gently to combine. Sprinkle crumbled feta on top and serve alongside hot chicken skewers.

Notes

Marinate chicken for at least 30 minutes for tenderness and flavor. Use a digital thermometer to ensure chicken is cooked to 165°F. Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Prepare salad and dressing ahead but add feta just before serving to keep salad fresh. Reheat chicken gently to maintain juiciness.
