  • 2 tablespoons olive oil, divided
  • Salt and black pepper to taste
  • 1 pound ground turkey (93% lean)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 ounces) diced tomatoes (fire-roasted preferred)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (8 ounces) tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ cup chicken or vegetable broth (optional, if chili is too thick)
  • Greek yogurt or sour cream (for topping)
  • Shredded cheddar cheese (for topping)
  • Fresh cilantro, chopped (for topping)
  • Diced avocado (for topping)
  • Sliced green onions (for topping)
  • Lime wedges (for serving)

Instructions

  1. Preheat oven to 400°F (200°C). Wash and scrub sweet potatoes, pat dry, and prick each with a fork. Rub with 1 tablespoon olive oil and season with salt and pepper. Place on a parchment-lined baking sheet.
  2. Roast sweet potatoes for 35-45 minutes, flipping halfway, until fork-tender. Let cool slightly.
  3. While potatoes roast, heat remaining 1 tablespoon olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook 3-4 minutes until translucent. Add garlic and bell pepper, cook 2 more minutes.
  4. Add ground turkey to skillet. Break up with a wooden spoon and cook until no longer pink, about 5-6 minutes, letting it brown slightly.
  5. Sprinkle chili powder, cumin, smoked paprika, oregano, and a pinch of salt over turkey. Stir and cook 1 minute to toast spices. Add diced tomatoes (with juices) and tomato sauce. Stir well.
  6. Bring chili to a gentle simmer, reduce heat to low, and cook 10-15 minutes, stirring occasionally. Add broth if too thick. Stir in black beans during last 5 minutes. Adjust seasoning to taste.
  7. Slice roasted sweet potatoes open lengthwise and fluff insides with a fork. Spoon turkey chili generously over each. Top with Greek yogurt, cheese, cilantro, avocado, green onions, and a squeeze of lime. Serve immediately.

Notes

For best texture, don’t overcook sweet potatoes; check at 30 minutes. Let chili reduce to a thick consistency to avoid soggy potatoes. Toast spices for deeper flavor. Season in layers with salt. Rinse black beans to remove excess sodium and canned taste. Chili tastes even better the next day.
