  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • 23 tablespoons warm water
  • 1 teaspoon maple syrup or honey

  • 1 cup cooked quinoa or brown rice
  • Optional toppings: fresh parsley or cilantro, toasted sesame seeds, crumbled feta or avocado slices

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Peel and cube the sweet potato into roughly 1-inch pieces. Slice the bell pepper, zucchini, and onion into bite-sized pieces. Cut broccoli into small florets.
  3. In a large bowl, combine all the cut vegetables with 2 tablespoons olive oil, smoked paprika, salt, and pepper. Mix well until evenly coated.
  4. Arrange the veggies in a single layer on the baking sheet, ensuring they are not crowded.
  5. Roast the vegetables for 25-30 minutes, stirring halfway through, until golden edges and tender centers form.
  6. While veggies roast, cook 1 cup quinoa or brown rice according to package instructions (about 15-20 minutes).
  7. In a small bowl, whisk together tahini, lemon juice, minced garlic, maple syrup, and salt. Slowly add warm water, 1 tablespoon at a time, until the sauce is creamy and pourable.
  8. Assemble bowls by starting with the cooked quinoa or rice, topping with roasted veggies, and drizzling generously with tahini sauce.
  9. Add optional toppings like fresh herbs, sesame seeds, or avocado slices.
  10. Serve warm or pack for meal prep. Store tahini sauce separately if preparing ahead.
