These healthy no-bake granola bars are simple, forgiving, and actually keep you full. Made with real food ingredients like oats, peanut butter, and honey, they come together in just 5 minutes and require no baking.

  • 2 cups old-fashioned rolled oats
  • 1 cup creamy peanut butter
  • ½ cup honey
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup dark chocolate chips
  • ¼ cup unsweetened shredded coconut
  • ¼ cup chopped almonds
  • ¼ cup dried cranberries or raisins

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. In a medium saucepan over low heat, combine peanut butter, honey, and salt. Stir constantly for 2-3 minutes until smooth and warm. Do not let it boil.
  3. In a large mixing bowl, combine rolled oats, chocolate chips, shredded coconut, chopped almonds, and dried cranberries. Stir to distribute evenly.
  4. Remove saucepan from heat and stir in vanilla extract. Pour the warm peanut butter mixture over the dry ingredients and fold until every oat is coated and the mixture looks glossy.
  5. Transfer the mixture to the prepared pan. Press down firmly and evenly using the bottom of a flat measuring cup or glass. Press for about 2 minutes until the surface is smooth and compact.
  6. Place the pan in the refrigerator for at least 2 hours, or overnight for best results.
  7. Lift the entire block out using the parchment paper handles. Place on a cutting board and use a sharp serrated knife to cut into 12 bars. Wipe the knife clean between cuts for cleaner edges.

Notes

For best texture, warm the peanut butter and honey mixture until smooth. Press the mixture firmly into the pan and chill for at least 2 hours. Bars can be stored in an airtight container in the refrigerator for up to 2 weeks, or frozen for up to 3 months. For nut-free version, use sunflower seed butter. For gluten-free, use certified gluten-free oats.
